Hidden inside the Plaza Athénée Bangkok lies a gem waiting to be discovered.  The Reflexions, a “modern” French restaurant combines fresh local ingredients with the best imported meats & cheeses to offer diners a creative and delicious culinary journey.  If you are not a fan of molecular gastronomy, do not let the term “modern” French cuisine turn you away.  Chef Mark Ian Jones employs modern techniques to classic dishes while still keeping the dishes approachable and familiar.  I was delighted in the absence of emulsified foams, caviar pearls and excessive use of sous vide- instead Chef Mark relies on his impressive understanding of cooking techniques along with his experience cooking in several Michelin starred restaurants in Europe - his training is evident in the perfect seasoning of each dish that we sampled the night we visited. 

Chef Mark and his culinary team where not only on point when it came to technique and seasoning but also had a great respect for the products they were using.

We started out our meal with a playful amuse bouche - hot rock seared tuna perfumed with charred rosemary, roasted eggplant, tomato and olive oil served with a smooth gazpacho shooter.  The tuna was tender and slightly warmed by the heat in the rock while the eggplant caponata was complemented by the aroma of the rosemary.  

Our palates now awakened we were treated to a buttery rendition of summer asparagus soup with black truffle.  Creamy and smooth with a toothsome bite of truffle - it was the essence of asparagus.

Arriving next seared Hokkaido scallop, Scottish Langoustine & apple puree with crispy bacon, frisee & green apple salad.  The tender and sweet langoustines and scallop found their perfect match- tart green apple, bitter frisee and smoky rich bacon.  Truly enjoyable.

At this point we could see that Chef Mark and his culinary team where not only on point when it came to technique and seasoning but also had a great respect for the products they were using.  This was evident in our next course, seared Foie Gras & pineapple jam.  The Foie was seared hard achieving a nice crust but not overcooked and dusted with finishing salt.  The richness of the foie was deliciously cut by the tart sweetness of the housemade pineapple jam.  Paired with a  glass of 2013 Woodbridge Chardonnay it was an enjoyable pairing.

If Foie or scallops are not for you, the fresh herb crusted lamb & sweetbreads with spring vegetables and demi glace was not only beautiful to look at but delicious as well.  The lamb was exceedingly tender and mild in flavor, the sweetbreads crispy little nuggets and the brightly colored vegetables bathed in butter were surrounded by a pool of richly flavored demi glaze glistening and full of flavor.

Rounding out our meal, we were presented with two desserts - from the menu -chocolate fondant, raspberry & ice cream and off menu (Chef Mark is still developing it) a white chocolate and mango espuma with passion fruit gelee, white chocolate spheres & raspberries.  The fondant was as you expect it to be, gooey warm chocolate innards, cool ice cream and tart raspberries.  The off menu espuma arrived at the table with more theatrics- the clear glass goblet nestled in dry ice, smoke rolling from the top while keeping the dish nicely chilled looked impressive. Taking a big scoop and popping the spoon into my mouth I was pleasantly surprised by the tart flavor of the mousse as well as the popping texture of the white chocolate balls.  I hope that Chef Mark puts this dish on the menu for I found it not only to be delicious to eat but fun as well.

Not to be overshadowed by the food, the service team at Reflexions were courteous, prompt and professional.  Always at hand if anything was needed, clearing plates and resetting silverware in between courses, as well as keeping our glasses full and our experience pleasant.  

Offering 2 set menu options as well as ala carte Reflexions has something to offer everyone.  But if you are looking for something a little different Chef Mark has also started his “Gastro Bistro Experience” an ala carte buffet featuring unlimited French bistro classics prepared to order (no chaffing dishes here!)  as well as including free flow beverages at a very reasonable 2100++thb per person.
