The ancient Mayans, one of the most advanced civilizations of their time, knew the power of raw cacao, but do you? Bring your chocolate fantasies to life and indulge with five contemporary chocolate creations in this special class, tailored to the serious raw chocolate conessour.
This class will be largely taught in a ‘demo-style,’ although there will be some hands-on time for attendees to participate. Registration also includes a printed packet with recipes for the items produced in the class as well as a raw resource guide document. Attendees will be able to sample all dishes made during the demo. All dishes are dairy-, egg-, wheat- and gluten-free.
Topics to be covered
- Tempering your raw chocolate for better texture and ‘durability’
- Create filled chocolate candies and candy bars
- Make white chocolate – without the dairy!
- Cacao butter v. coconut oil in chocolate-making*
- Which sweeteners are available for creating raw chocolate, and what are their differences
*As raw cacao butter is not currently available for purchase in Bangkok, class participants will be provided with a portion of cacao butter to take home for future raw chocolate creations
- Something to write with
- A water bottle with drinking water
- A food storage container to take samples home, should you become full before the class is over
- Your appetite for chocolate!
Class time is 10am – 1:30pm and will be located in central Bangkok, a 5 minute walk from the Chidlom BTS station. Directions and a map will be provided to participants once their registration is completed.
Class registration fee is 2,500 Thai baht.
